Ingredients

  • 3 eggs
  • 1 ¾ cups sugar
  • 1 cup salad oil
  • 1 tablespoon vanilla
  • 2 cups raw, unpeeled zucchini squash, ground
  • 1 tablespoon grated orange peel
  • 3 cups sifted all-purpose flour
  • 1 teaspoon salt
  • 1 teaspoon soda
  • ¼ teaspoon baking powder
  • 2 teaspoons cinnamon
  • ½ cup chopped nuts

Instructions

  1. Beat eggs until light and fluffy.
  2. Add sugar and beat well.
  3. Stir in oil, vanilla, zucchini, and orange peel.
  4. Sift together dry ingredients and stir in.
  5. Add nuts if desired.
  6. Pour into 2 greased 8 ½ x 4 ½ loaf pans. Grease pans well and line with wax paper for easy removal.
  7. Bake at 325° for 50 to 60 minutes, or until done.
  8. Remove from pans and cool on rack.

Notes

Finely chopped dates, raisins, or cherries can be added for variety. “Real good” is written under the source note.
