Ingredients
- 3 eggs
- 1 ¾ cups sugar
- 1 cup salad oil
- 1 tablespoon vanilla
- 2 cups raw, unpeeled zucchini squash, ground
- 1 tablespoon grated orange peel
- 3 cups sifted all-purpose flour
- 1 teaspoon salt
- 1 teaspoon soda
- ¼ teaspoon baking powder
- 2 teaspoons cinnamon
- ½ cup chopped nuts
Instructions
- Beat eggs until light and fluffy.
- Add sugar and beat well.
- Stir in oil, vanilla, zucchini, and orange peel.
- Sift together dry ingredients and stir in.
- Add nuts if desired.
- Pour into 2 greased 8 ½ x 4 ½ loaf pans. Grease pans well and line with wax paper for easy removal.
- Bake at 325° for 50 to 60 minutes, or until done.
- Remove from pans and cool on rack.
Notes
Finely chopped dates, raisins, or cherries can be added for variety. “Real good” is written under the source note.
