Ingredients

Crust:

  • 2 cups vanilla wafers
  • ⅓ cup sugar
  • ½ cup oleo

Cream Cheese Layer:

  • 2 eggs, beaten
  • ¾ cup sugar
  • 8 ounces cream cheese, softened

Pumpkin Layer:

  • 2 cups pumpkin
  • 3 egg yolks
  • ½ cup sugar
  • ½ cup milk
  • ½ teaspoon salt
  • 1 tablespoon cinnamon
  • 1 envelope gelatin, dissolved in ¼ cup water

Topping:

  • 3 egg whites
  • ¼ cup sugar
  • 8 ounces Cool Whip

Instructions

  1. Mix vanilla wafers, sugar, and oleo together. Press into a 9x13 pan.
  2. Mix beaten eggs, sugar, and softened cream cheese well. Pour over crust.
  3. Bake at 350° for 20 minutes.
  4. Mix pumpkin, egg yolks, sugar, milk, salt, and cinnamon. Heat to boiling.
  5. Add gelatin dissolved in ¼ cup water. Cook 2 minutes. Cool.
  6. Beat egg whites. Add ¼ cup sugar.
  7. Fold egg white mixture into pumpkin mixture.
  8. Spread over cooled cream cheese layer.
  9. Spread Cool Whip over top and refrigerate.
