Ingredients

  • 1 lg. egg
  • 4 egg yolks from 2 lg eggs
  • ¼ cup sugar
  • 2 TBS stick butter, melted
  • ¼ cup vegetable oil
  • ¼ cup milk
  • 1 ½ teaspoon vanilla extract
  • 1 ½ cups all-purpose flour
  • 1 ½ teaspoon baking powder
  • ¼ teaspoon salt
  • Veg. oil for deep frying

Coating:

  • ½ cup confection sugar
  • ½ teaspoon ground cinnamon or ¼ teaspoon nutmeg, optional

Instructions

  1. In med. size bowl whisk egg, egg yolks, sugar, butter, oil, milk and vanilla until smooth.
    Stir flour, baking powder and salt in large bowl to mix. Stir in egg mixture until blended.
  2. Pour oil to a depth of 3 inches into 3 or 3 ½ quart pan. Oil must reach 350° to 360°.
  3. Carefully drop up to 5 TBS’s batter one at a time into hot oil; fry 1 minute or until doughnuts float. Turn them over + fry 1 min longer.
  4. Remove with slotted spoon onto paper towel to drain.
  5. Repeat with rest of batter.
  6. Mix coating in shallow bowl.
  7. Roll doughnuts, few at a time, to coat.
