Ingredients

  • 2 ½ cups sugar
  • ½ cup vegetable oil
  • 4 large eggs
  • 1 can pumpkin, 16 ounces, about 2 cups
  • 1 tablespoon grated orange peel
  • 3 cups all-purpose flour
  • 2 teaspoons baking soda
  • 1 teaspoon cinnamon
  • ½ teaspoon ground allspice
  • ½ teaspoon ground clove
  • ⅔ cup orange juice

Orange Glaze:

  • 1 ½ cups confectioners sugar
  • 1 teaspoon grated orange peel
  • 1 to 2 tablespoons orange juice

Instructions

  1. Preheat oven to 350°.
  2. In large bowl, beat sugar, oil, and eggs.
  3. Stir in pumpkin and orange peel.
  4. Sift together flour, baking soda, cinnamon, allspice, and clove.
  5. Add to creamed mixture alternately with orange juice.
  6. Pour into buttered 12-cup Bundt pan.
  7. Bake at 350° for 50 to 55 minutes.
  8. Cool 5 minutes and invert onto wire rack. Cool.
  9. Spoon glaze over cake.
  10. Orange Glaze:
    Blend confectioners sugar, grated orange peel, and orange juice in small bowl. Spoon over orange pumpkin cake.
