Ingredients
Crust:
- 2 cups vanilla wafers
- ⅓ cup sugar
- ½ cup oleo
Cream Cheese Layer:
- 2 eggs, beaten
- ¾ cup sugar
- 8 ounces cream cheese, softened
Pumpkin Layer:
- 2 cups pumpkin
- 3 egg yolks
- ½ cup sugar
- ½ cup milk
- ½ teaspoon salt
- 1 tablespoon cinnamon
- 1 envelope gelatin, dissolved in ¼ cup water
Topping:
- 3 egg whites
- ¼ cup sugar
- 8 ounces Cool Whip
Instructions
- Mix vanilla wafers, sugar, and oleo together. Press into a 9x13 pan.
- Mix beaten eggs, sugar, and softened cream cheese well. Pour over crust.
- Bake at 350° for 20 minutes.
- Mix pumpkin, egg yolks, sugar, milk, salt, and cinnamon. Heat to boiling.
- Add gelatin dissolved in ¼ cup water. Cook 2 minutes. Cool.
- Beat egg whites. Add ¼ cup sugar.
- Fold egg white mixture into pumpkin mixture.
- Spread over cooled cream cheese layer.
- Spread Cool Whip over top and refrigerate.
