Ingredients

  • 12 vanilla wafers
  • 2 8-ounce packages cream cheese, softened
  • ½ cup sugar
  • 1 teaspoon vanilla
  • 2 eggs

Toppings:

  • Fruit
  • Nuts
  • Chocolate
  • Preserves

Instructions

  1. Line muffin tins with foil liners.
  2. Place 1 vanilla wafer in each liner.
  3. Mix cream cheese, vanilla, and sugar on medium speed until well blended.
  4. Add eggs and mix well.
  5. Pour over wafers, filling each liner ¾ full.
  6. Bake 25 minutes at 325°.
  7. Remove from pan when cool.
  8. Chill.
  9. Top with fruit, nuts, chocolate, or preserves.
